I have tried many a vegan gluten-free cookie, and have almost always been disappointed. So when I picked up some Lucy's Cinnamon Thins, my expectations were pretty low.
Turns out they are delicious! They have a satisfying crunch, and a nice flavor. There's no strange aftertaste, either, which seems to be a miracle with gluten-free cookies. I'm pretty picky about flavor, but these cookies are just good.
Drawbacks: You might want to eat the whole box. They're also not really "thin" as described, but they are quite crispy.
